One Pot, Three Meals

When your days are packed and grocery prices continue to climb, finding ways to stretch both your budget and time becomes essential. That’s where the One Pot, Three Meals method comes into play. It is a simple, smart approach that turns one big batch of food into three delicious, and completely different meals. Think of it like meal prep without the boredom or the extra dishes!

The concept is easy: cook a large versatile base (hint: a protein source usually works best) once and use it as the foundation for additional meals throughout the week. The cost savings are one of the biggest advantages! Buying ingredients in larger quantities is often cheaper and using the same base across multiple meals can help cut down on food waste. Plus, cooking once instead of three separate times can help cut down on time spent making food and more time doing other things- like spending time with family around the holiday season.

Recipe Set #1: One-Pot Salsa Chicken (Base Recipe)

Makes enough for 3 meals (4–6 servings total)

Ingredients:

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 jar (16 oz) salsa
  • 1 can black beans, drained
  • 1 cup frozen corn
  • 1 diced onion
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste

Instructions:

  1. Add all ingredients to a large pot or Dutch oven.
  2. Cover and simmer on medium-low for 35–40 minutes, or until chicken is fully cooked and shreddable.
  3. Shred the chicken directly in the pot using two forks.
  4. Stir, taste, and adjust seasoning.
  5. Store in the refrigerator for up to four days.

This flavorful mixture becomes the star of three fast weeknight meals:

Meal 1: Salsa Chicken Tacos

Warm corn or flour tortillas, add a scoop of salsa chicken, and top with shredded lettuce, cheese, avocado, and a squeeze of lime.

Prep time: 5 minutes

Meal 2: Southwest Chicken Bowls

Scoop warm salsa chicken over rice or quinoa. Add toppings like diced tomatoes, roasted veggies, or sour cream. Perfect for a balanced protein-carb-veggie dinner.

Prep time: 10 minutes

Meal 3: Cozy Chicken & Corn Soup

Place 2 cups of the leftover salsa chicken in a pot with 3 cups chicken broth. Add extra veggies if desired and simmer 10–12 minutes. Serve with crushed tortilla chips.

Recipe Set #2: One-Pot Italian Turkey & Veggie Marinara (Base Recipe)

Makes enough for 3 meals (4–6 servings total)

Ingredients:

  • 2 lbs ground turkey
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 2 cups chopped spinach or kale
  • 1 jar (24 oz) marinara sauce
  • 1 tbsp Italian seasoning
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • Salt & pepper to taste

Instructions:

  1. In a large pot, brown the turkey with onion and pepper. Drain if needed.
  2. Add garlic, marinara, Italian seasoning, and greens.
  3. Simmer 15 minutes on low.
  4. Taste and season.
  5. Store for 3–4 days.

Meal 1: Classic Spaghetti with Turkey Marinara

Boil pasta, top with the marinara turkey, and finish with parmesan.

Prep time: 10 minutes

Meal 2: Italian Stuffed Peppers

Fill halved bell peppers with the turkey marinara. Top with mozzarella. Bake 20 minutes at 375°F.

Prep time: 5 minutes + bake

Meal 3: Minestrone-Style Soup

Add 2 cups turkey marinara + 3 cups broth + ½ cup small pasta + 1 can white beans. Simmer 12–15 minutes.

Recipe Set #3: Plant-Based Curry Chickpeas & Veggies Base

Makes enough for 3 meals (4–6 servings total)

Ingredients:

  • 2 cans chickpeas, drained
  • 1 can coconut milk (full fat or light)
  • 1 can diced tomatoes
  • 2 cups mixed veggies (frozen or fresh)
  • 1–2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp salt
  • Optional: 1 tsp ginger, 1 tsp garlic

Instructions:

  1. Add everything to a pot.
  2. Stir and simmer for 20 minutes.
  3. Taste and adjust seasoning.
  4. Refrigerate up to 4 days.

Meal 1: Curry Rice Bowls

Serve the curry over jasmine or basmati rice. Top with cilantro or lime juice.

Ingredients:

Instructions:

  2. Cover and simmer 35–40 minutes.

Pile onto buns with coleslaw.
